Biography
Mary Chan Troken has worked in or been affiliated with the food service industry for her entire career.
Her work spans nearly four decades and includes managing large institutional food programs, teaching various nutrition
and safety-related subjects and working closely with the City of Chicago, the State of Illinois and the National Restaurant Association.
She is fluent in Chinese as well as in English and is among the very few individuals who are certified to teach in Chinese in the State
of Illinois and the City of Chicago.
Mrs. Troken founded AAFS to provide exceptional instruction in Food Service Sanitation including City of Chicago
certification classes. She conducts Chicago Summer Festival Seminars which teach individuals to serve or prepare food safely at
outdoor events. And Mrs. Troken teaches private Food Handler certification sessions for groups of 25 or more.
Mrs. Troken and her team of AAFS teachers offer classes at convenient locations and times throughout Chicago. Mrs. Troken is
committed to assist those seeking instruction so that they may work successfully and safely in the food service industry.
